For food lovers everywhere, the beginning of the holiday season means it’s time to start making food gifts for family and friends. Today the cooking demonstration class got to watch Russian Caramels being made. Some thought it was the dental crown breaking sort of caramel but this is much like a caramel fudge.

This recipe has only THREE ingredients! How easy is that? It does take quite a bit of stirring but that’s the only effort required. No thinking whatsoever!
Place the milk, butter and sugar in a heavy saucepan and slowly bring to a boil while stirring constantly. I am serious, if you don’t stir it will burn and then you’ll have to toss it all out and start over.

Stir for 20 minutes. You really do need to stir constantly but it’s easy stirring. The mixture will begin to darken and thicken at about 20 minutes, then pour into a small buttered pan.

Spread the mixture into the pan and smooth the surface with a silicone spatula. Once it’s all smooth, chill a knife and score the caramel with cutting marks before cooling.

Then place in a cool place til hard. We placed ours in the fridge for about 20 minutes.

Once the caramels are hard, turn out and following the scored lines, cut into pieces. You’ll be a hero with this easy recipe!

- 1 tin sweetened condensed milk
- 125 grams butter
- 125 grams sugar
- Melt butter
- Add sugar
- Add sweetened condensed milk
- Boil 20 minutes stirring constantly til slightly darker, smooth and thick
- Pour into a greased slab tin
- Mark whilst warm and cut when cold
Makes 48 small pieces of fudge. If I were to make it again and use the same size pan I would double the recipe.
