| Brandied Rasin and Allspice Truffles |

This takes chocolate covered raisins into the adult crowd!
Ingredients
- 80 grams raisins
- 1 tsp ground allspice
- 60 mls brandy
- 35 grams vanilla caster sugar
- 2 1/2 tbsp water
- 450 grams couverture chocolate
- 180 mls pouring cream
Method
- Place raisins, allspice and brandy in a bowl
- In a small saucepan combine the water and sugar and stir over low heat and bring to a boil for a minute or two til the sugar has dissolved
- Stir into raisin mixture and mix well
- Cover with plastic wrap and stand for 24 hours
- Finely chop 250 grams of the chocolate and place in a bowl
- Place cream in a saucepan and bring to the boil
- Pour cream over chocolate and stir til chocolate melts
- Add raisin mixture and stir till well combined
- Cover, cool in refrigerator for 2 hours or till mixture is firm
- Using a teaspoon, scoop small amounts of mixture and form into balls
- Break up remaining chocolate and place in a bowl over simmering water – off the heat
- Using a dipping swirl or fork, dip each truffle in chocolate and place on a foil tray
