Brandied Rasin and Allspice Truffles

This takes chocolate covered raisins into the adult crowd!
Ingredients
  • 80 grams raisins
  • 1 tsp ground allspice
  • 60 mls brandy
  • 35 grams vanilla caster sugar
  • 2 1/2 tbsp water
  • 450 grams couverture chocolate
  • 180 mls pouring cream
Method
  1. Place raisins, allspice and brandy in a bowl
  2. In a small saucepan combine the water and sugar and stir over low heat and bring to a boil for a minute or two til the sugar has dissolved
  3. Stir into raisin mixture and mix well
  4. Cover with plastic wrap and stand for 24 hours
  5. Finely chop 250 grams of the chocolate and place in a bowl
  6. Place cream in a saucepan and bring to the boil
  7. Pour cream over chocolate and stir til chocolate melts
  8. Add raisin mixture and stir till well combined
  9. Cover, cool in refrigerator for 2 hours or till mixture is firm
  10. Using a teaspoon, scoop small amounts of mixture and form into balls
  11. Break up remaining chocolate and place in a bowl over simmering water – off the heat
  12. Using a dipping swirl or fork, dip each truffle in chocolate and place on a foil tray
