Chicken Tikka MasalaThe How to Cook Academy continues its Friday Cooking Class “Pantry Tour of Spices” by taking our taste buds on a small trip to India to explore Curry Traders’ Chicken Tikka Masala: a rich blend of roasted chicken, greek-style yogurt, cashews, hearty tomatoes and onions, and a plethora of herbs and spices. Originating as a chance mixture in Punjab 50 years ago, Chicken Tikka Masala has remained a staple of cross-cultural Indian cuisine—so much that it has become the most popular restaurant dish in the UK.

The method of Chicken Tikka Masala varies from restaurant to restaurant and from person to person. However, the general consensus is to marinate chicken in yogurt and spices before baking it in an oven and serving it with a masala (or mix of spices) sauce.  The usual suspects of a Chicken Tikka Masala recipe include tomatoes, cream, turmeric powder and paprika powder.

How To Cook Chicken Tikka MasalaSticking specifically to Curry Traders’ method, the spice blend includes paprika, turmeric, cardamom, cinnamon and coriander to invoke a mild spicing. Curry Traders separates their marinating blend and masala blend into two separate bags, along with a third bag of cashews to be added to the masala.

How To Cook Chicken Tikka MasalaThe marinating blend is ground and combined with yogurt, lemon juice, grated ginger and the chicken. It is left to sit for one hour. Onions and garlic are heated in a saucepan with oil and cooked for two minutes before adding the masala spice blend. Tomatoes, cashews and brown sugar are added and further cooked before being whisked in a blender again. The contents are then poured back into the saucepan, where chicken stock and cream are added, and then let simmer. When the chicken pieces are finished marinating, they are placed into a pre-heated oven (240 C) on a shallowly-oiled baking dish for 15-20 minutes. Suggested serving is placing the baked chicken pieces on a bed of rice and pouring the masala on top.

  • 1 Curry Traders Chicken Tikka Masala Spice Blend
  • 1 kg to 1.5 kg chicken breast
  • 1 cup Greek-style yogurt
  • 1 tbsp ginger (grated)
  • 1 tbsp lemon juice
  • 2 tbsp vegetable oil
  • 1 large onion, diced
  • 4 cloves of garlic, minced
  • 400 g tin of crushed tomatoes
  • 3 tsp brown sugar
  • ½ cup of chicken stock
  • 1 cup thickened cream
  • Coriander (garnish)

  1. Cut chicken breast into strips or large chunks
  2. Squeeze lemon to yield 1 tbsp lemon juice
  3. Crush garlic and mince
  4. Dice onions
  5. Chop coriander for garnish
  6. Grind contents of Bag 1 with mortar and pestle and pour into large bowl
  7. Mix in yogurt, lemon juice, ginger and chicken pieces
  8. Marinate in fridge for atleast 1 hour
  9. Preheat oven to 240 C
  10. Oil a shallow roasting tray and place chicken evenly on tray
  11. Bake on the top shelf of oven for 15-20 minutes
  12. Meanwhile, heat vegetable oil in large saucepan on low-medium heat
  13. Stir in onions and garlic. Sautee for 5 minutes.
  14. Stir in Bag 2, tomatoes, cashews, and brown sugar. Cook for 2 minutes
  15. Take the saucepan off the heat, let the contents cool
  16. Pour contents into a blender and whiz up
  17. Pour contents back into saucepan
  18. Pour chicken stock into unwashed blender, whiz up, and add to saucepan
  19. Stir in cream, let simmer for 1 minute
  20. Pour sauce into serving bowl
  21. Take the chicken out of the oven, pour into separate serving bowl
  22. Garnish chicken and sauce with coriander
