Ingredients
- 1kg good quality sausages
- 2 brown onions peeled and diced
- 2 cloves garlic grated with a microplane grater
- 2 tablesp Extra Virgin Olive Oil
- 1 kg ripe cherry tomatoes or enough to cover the bottom of the baking dish
- 250gms truss tomatoes
- 4 sprigs of rosemary
- ½ bunch thyme
- 2 tablesp chopped flat leaf parsley
- 1 tablesp balsamic vinegar
Method
- Preheat oven to 190C
- Place EVOO into a pan and sauté onions and garlic till caramelized
- Place onion mix into a baking dish
- Add cherry tomatoes and herbs to baking dish
- Tomatoes need to cover the bottom of the baking dish
- Drizzle with balsamic vinegar
- Bake in heated oven for 30mins till tomatoes start to break down
- Lay sausages on top of tomato and onion mix and push down into mixture
- Place truss tomatoes on top
- Bake for a further 30 mins
- Remove from oven and drizzle with Balsamic
- Serve on a mash of your choice with steamed greens
